Raw Kale Salad
Super queen of veggies kale is truly a powerbot for your bod. This recipe makes a tasty accompaniment to any meal.
One bunch of raw washed kale, de-ribbed and diced
2 cups shredded cabbage, carrots or beets (can also mix for variety)
½ an apple or pear thinly sliced
½ cup diced almonds
4tbs olive oil
4tbs apple cider vinegar or lemon juice
3tbs sesame seeds, white or black
Salt to taste
In a large bowl mix the kale and other shredded veggies together with the oil, vinegar or lemon juice and salt. Making sure your hands are clean, massage these veggies together for about 5 minutes or until tender. This breaks down the cell structure to give you supple greens that retain their raw uncooked nutrients. When the greens and veggies are to your liking add the apple or pear and the almonds and mix together. Sprinkle sesame seeds on top and serve.
