Jook- Chinese rice porridge

This is a great dish for breakfast or any meal of the day.  The porridge is easy to digest and helps to boost stomach and spleen function.  You can add almost anything you want to the basic recipe, jook also called congee has long been considered a health benefiting meal.

Basic Jook recipe
1 cup uncooked organic white rice, any variety will do
6 cups water
1cup mung beans
2 tsp salt

Combine all ingredients and cook on a low boil for an hour, stirring occasionally.  You can add green onions, cooked egg, parsley, sesame seeds, hot sauce, tamari to your jook after it is done cooking.
For other variations on the basic recipe try adding different kinds of meat, chicken, beef or fish.  You can also add any type of vegetable you like, and even some beneficial and edible Chinese herbs such as shao yao Chinese yam, gou qi zi berries, hong hua dates, and ginseng.
